Recipe – Greek Country Sausage Spaghetti Sauce
Christmas, is just around the corner, so I’m finally making a start on the preparations.
MGG (My Greek God) is down in the basement, hunting out the Christmas treasures, the tree is up, but looking rather naked, apart from the lights and ribbon, it is bare, waiting for tomorrow, when the big trimming spree is occurring.
Our sweet Granddaughter, Melina (2.5 yrs) is coming to do it, I shall be helping, I’ve done all the other Christmassy stuff, but have strict instructions, not to start on the tree without her, I suspect it may take a long time, so I need something quick for lunch, quick but warm, filling and tasty, as the weather is wet and cold!
I decided on spaghetti with Greek country sausage sauce.
Most spaghetti sauces are quick to make, any pasta can be used, but to save time, spaghetti number ten, takes only seven minutes to cook.
Ingredients:
2 Greek country sausages (Long in length variety!)
2 chopped onions
1 chopped garlic clove
I carton tomato puree or tomato juice (About 350 ml)
1 cup of water
1/2 Cup Olive oil
Salt & pepper to taste
1 packet (500g) of spaghetti or other pasta
Grated Parmesan (or any hard cheese) cheese for serving
Method
Thinly slice the sausage and sauté in olive oil for 5 minutes.
Add the chopped onion and garlic and sauté for a further 5 minutes.
Add the tomato puree and the water
Season with salt & pepper.
Simmer for 20 to 30 minutes.
No herbs or spices are needed for this sauce, the sausage is spicy enough.
For the spaghetti
Bring a large pan of water to the boil, add a teaspoon of salt, and put in the spaghetti.
Boil for the recommended time.
Tip: A small amount of olive oil, added to the boiling spaghetti, will prevent it boiling over.
When the spaghetti is cooked, drain well, and return to the pan.
Pour in the sausage sauce and mix it all up really well.
Serve with grated cheese.
